DeFalco’s offers several brand name wine kits, some of which have produced award winning wines in international competitions. Most of our wines are designed to produce 28-30 (750ml) bottles of wine. Each kit contains detailed instructions, grape juice concentrate or a combination of grape juice concentrate and fresh grape juice, stabilizers, finings and yeast. Some styles may also include oak chips, elderberries, elderflowers, raisins or grape skins.

  All wine kit styles listed on this site are available to be made in the comfort and convenience of your own home.  If you would like to make wine  on our premises, an additional service charge of $34.00 per kit applies to the kit prices listed on this site as well as your presence will be required during the mixing and the bottling process.  (Service Charge Includes: filtered water, production costs, corks and shrink caps as well as use of all the automated equipment...bottle sanitizer, filler and corker) 

We've worked hard to earn your business and the products you make with us will be sealed and unopened in its' original packaging until the time of mixing...no plain unmarked packaging is available at any of our locations...the wine style you pay for is the wine style you get.  

4 WEEK KITS Styles and Prices
Can include 7-10L of grape juice concentrate or a combination of grape juice concentrate and pure grape juice. These kits are ready to be bottled in 4 weeks. Can be enjoyed young. Usually 2-3 months aging time.

5 WEEK KITS Styles and Prices
Can include 8-12L of grape juice concentrate or a combination of grape juice concentrate and pure grape juice along with grape skins in selected styles. These kits are ready to be bottled in 5 weeks. Can be enjoyed young. Usually 2-3 months aging time.

6 WEEK KITS Styles and Prices
Can include 15-18L of a combination of grape juice concentrate and pure grape juice. These kits produce full-bodied wines with more bouquet and flavour with longer aging potential. Must be aged for a minimum of 6 to 12 months to truly be appreciated.

Below is our consolidated list of each style available throughout our brands.

Reds

Amarone – Rich with character, dark in colour, this wine is packed with raspberry, blackberry and cassis flavours. The finish is long, lingering and full of ripe tannins.

Caberent Malbec Carmenére – This wine is a classic example of the spicy nature of the Cabernet Sauvignon, high alcohol producing, rustic qualities of Malbec and the deep colour of Carmenère. Strong notes of green pepper, dark fruit and leather define this rich dark wine. Smooth tannins grace the palate followed by blackberries and spice. 

Cabernet/Merlot – When these two grapes are blended the result is a firm and smooth red wine, warm with the fullness of ripe berries. Rounded with a hint of oak to give it a slightly toasted flavour.

Cabernet Sauvignon – Known for its depth of flavour and aroma, this dry wine is full-bodied, rich and intense. It boasts a cherry-currant flavour with herbal undertones, nicely rounded with oak. 

Cabernet/Shiraz - A blend of Cabernet Sauvignon and Shiraz, this wine is rich, complex and hearty with peppery plum flavours and hints of chocolate. Designed to be well oaked, this wine should be cellared for a period of time after bottling. 

Cabernet Shiraz/Merlot – A well-balanced aroma of leather and black pepper gives way to intense jammy flavours of blackberries. The length of spicy flavour from the Cabernet, sweet berry fruit from the Shiraz and softening effect of the Merlot results in a tightly structured, well-balanced Australian wine. 

Cabernet Syrah Zinfandel – This full-bodied red wine bursts with bold flavours of black cherries and berries layered with toasted oak and vanilla and rich notes of dark chocolate and coffee. 

Carmenére – Oak produces soft tannins, subtle toast, and vanilla, providing a terrific backdrop to the aromas and flavours of blackberry, black cherry, tropical fruit, and spice from the grapes. Notes of coffee, mocha, and tobacco can be expected along with a mineral tang that forms as part of the lengthy finish. The wine is medium to full bodied with bright ruby colour.

Grenache Syrah Mourvèdre – Full and flavourful, this wine is supported by intense blackberry, blackcherry and plum aromas. Toasted French oak further accentuates the fruit-filled aroma.

Malbec – A rustic, medium-bodied red wine, this wine has a soft, rich texture, silky tannins, and flavour filled with ripe plums, currants, cherries and red berries. .

Malbec Syrah – The blend of these two classic varietals creates a wine that is full bodied with plenty of appeal. This wine is fruit forward and approachable with balanced toasted vanilla flavours from Hungarian oak cubes. The wine hints of cherries and black currant up front, with darker, richer notes of coffee, tobacco and licorice behind. 

Matador Red – A medium to full bodied red with full flavours of ripe berries and jammy spicy notes.

Merlot – This deep, rich grape produces a smooth red wine boasting flavours of blackberry, black currant, cherry and mint making this a very easy-drinking wine. Ages well. 

Mystic - A captivating blend that reveals intense fruity aromas on opening.  This full bodied red offers rich flavours of black cherry, mocha, spice and vanilla and closes with a velvety smooth finish. 

Nebbiolo –Deep in colour, high in tannin, full-bodied and robust. It has ripe black fruit flavours and should be oaked and cellared for several months before enjoying.

Pinot Noir – Rich red wine, hearty in nature, smooth in flavour. The soft texture and dark colour complement the flavours of berry fruit, with a subtle raspberry undertone. It ages gracefully, developing a velvety flavour.

Primo Rosso – A full-bodied red wine with incredible depth and complexity. Deep ruby red in colour with spicy aromas of cloves, nutmeg, black licorice and candied fruit. Core flavours of black cherry and blackberry are framed with hints of spice and warm oak.

Rosso Grande – A dry powerful wine with a deep ruby-garnet colour and spicy oak aroma. This wine is bursting with vibrant flavours of ripe berries and black cherries.

Sangiovese – This blend is famous for its full, dry character and elegant flavours of cherries and blackberries. Sturdy and robust, with tangy undertones and a slight spiciness. This is the ultimate Sangria base. 

Shiraz – A rich, dark, robust, red wine combining notes of sweet blackberries, black currants, plums, fresh pepper and medium oak. It ages gracefully into a velvety wine of pure elegance. 

Super Tuscan – The Super Tuscan is a bold blend of Sangiovese, Cabernet Sauvignon and Merlot. It is a full-bodied, muscular red wine with aromas and flavours of rich black fruits, spice, vanilla, plum, leather and raisin. Velvety tannins and great structure. 

Tempranillo - Medium bodied red that brings flavours of red cherry and strawberry that is medium oaked.

Toscana - This full bocied red has a nose for blackberry, black currant along with hints of vanilla and spice.  Velvety tannins with a round finish.

Trilogy - This medium bodied red brings flavours of red cherry and strawberry that is medium oaked.

Valpola/Valroza – A refreshing, lighter style Italian red. Dry and medium-bodied, this fragrant and fruity wine has a rich texture and delicate bouquet. The well-balanced tannic flavours also make this an excellent wine for aging. Especially good when served slightly chilled.

Vieux Château Du Roi – Extremely dark in colour, this robust yet smooth full-bodied dry red wine with a bouquet of ripe berries and flavours of plum. This wine will age well.

Winemaker's Trio Red – A modern, new world style wine featuring a blend of Cabernet Sauvignon, Syrah and Zinfandel. Aromas of vanilla, red berries and black cherries and sweet flavours of ripe raspberry, chocolate and cherry.

Zinfandel – A rich and fruity red wine full of luscious blackberry and plum flavours with a sprinkling of black pepper. Capable of aging to a very high quality.

Whites

Bella Bianco – Extraordinarily rich, buttery aromas and flavours are balanced by lush tropical fruit and full oak character.

Chardonnay – Tropical aromas full of ripe fruit with subtle undertones of oak. A medium-bodied wine with gentle flavours of apple and pineapple followed by a light, crisp finish. The addition of oak complements the wine with subtle nutty, buttery flavours. 

Gewurztraminer – This charming, exotic wine is true to its German translation: spicy. Deeply coloured and opulently aromatic, with an unmistakably flowery perfume and flavours of lychees, roses, cloves and nutmeg. Crisp, lush and refreshing.

Liebfraumilch – The featured grape variety is the Johannisberg Riesling in this popular style of German wine. It is light and fruity with a delicate bouquet. Well-balanced as both a dry, crisp wine or as a medium sweet wine.

Müller Thurgau – Medium in body with a delicate off-dry taste, this wine is balanced by mild acidity giving it a long-lasting finish. This wine offers unique flavours and an amazing aromatic, subtle, fruity perfume. 

Moscato - Full of playful, sweet, floral aromas, this wine boasts grapey, apple and citrus flavours.

Pinot Gris – Great body, zesty acidity and a refreshing finish of pear, white peach and pineapple. 

Pinot Blanc – A lighter, delicate dry white wine with a soft fruit flavour and lively fragrance. Known for its fresh, yeasty, apple aroma, sometimes with hints of spice. 

Pinot Grigio – A majestically soft, dry white wine that is low in acid with slight peach flavours. 

Riesling - Floral and fruity aromas of apricot, pear and apple. Citrus flavours are plentiful in this wine followed by a crisp, zesty finish. A smooth, full-bodied wine that ages gracefully over time. 

Riesling-Traminer – This dry, full wine with aromas of peach, apricot and nutmeg are the combination of two famous German wines blended into one. The fresh, crisp Riesling along with the exotic spiciness of Gewürztraminer makes a round well-balanced wine.

Sauvignon Blanc – A dry, medium-bodied delicate white wine best known for its grassy, herbal aromas and green fruit character. A unique French-style wine that ages well. 

Winemaker's Trio White – A delightful blend that highlights the apricot and floral notes of Viognier, the minerality of Riesling with the tropical aromas of Chardonnay. Fresh and balanced fruitiness complimented by hints of vanilla, this brilliant golden yellow wine has a lingering finish.

Verdicchio – This yellow-green grape produces a crisp and dry white wine with a subtle greenish hue. A light wine with an elegant aroma and flavour.

Viognier – A dry, deep gold in colour, full-bodied white with a powerful, rich and complex aroma of ripe apricots, orange blossoms and tropical fruit flavours.

Viognier Pinot Gris – This popular Australian white blend is extremely aromatic, opening with apricots and pear notes and finishing on a refreshing fruit forward note.

Blush, Niagara Mist, Dessert Wines

Blush Wines 

Pinot Noir Rosé – Bursting with the aromas and flavours of strawberry jam, complimented by raspberries, rhubarb and floral notes. Juicy on the palate, it's exquisitely balanced with a luxuriously smooth mouthfeel.

White Zinfandel – A very light wine with a delicate pink hue, strawberry aroma and a soft, slightly fruity taste. This wine is very refreshing when served well chilled.
 

Niagara Mist Wines

Blackberry Malbec – The intense fruit flavours of Malbec and the refreshing notes of blackberry dance on the palate. This slightly bold fruity wine will harmonize with the spicy flavours of beef empanadas and spicy meat pies. 

Black Cherry Pinot Noir – This wine produces a powerful, yet elegant, deep red berry flavour. The fruity character will entice your palate and offer you a bountiful aroma of a bowl of luscious black cherries.

BluePom White Merlot– This hot, exotic new blush style combines the aromatics and flavours of red berry fruits found in White Merlot with that of the tangy Blueberry and tart Pomegranate. The resulting wine is an eruption of sweet and juicy flavours that will leave you speechless. 

Green Apple Sauvignon Blanc – At first, you are immediately greeted with the aroma of fresh, green apples, then on the palate the sweetness of the apple is balanced with the slightly tart finish of the wine created from the famous Sauvignon Blanc grape. 

Peach Chardonnay – This tasty fruit combined with the smoothness of Chardonnay gives the sensation of biting into a juicy, succulent peach.

Pear Pinot Grigio – Juicy sweet pears, a splash of lemon, and notes of custard and white flowers, dance and sing from first approach to the refreshing finish. 

Raspberry Dragon Fruit White Shiraz – This blush style wine has been given some fire of excitement with the addition of sweet dragon fruit then gently splashed with tangy cool raspberries.

Raspberry Merlot – The natural blackberry flavours of the Merlot are accented with the refreshing flavour of fresh, ripe raspberries. The finish is soft, sweet and velvety.

Strawberry White Zinfandel – This refreshing fruit wine gives the bouquet of an exquisite abundance of fresh-picked strawberries.

Tropical Fruit Riesling – Bursting with aromas and flavours of juicy sweet pineapple, mango and kiwi. The Riesling’s subtle lemon/lime citrus notes create the perfect, clean, crisp finish.
