Liquid yeasts are guaranteed for 6 months from production dates.  Although we attempt to stock every style, it would be impossible to guarantee its freshness.  We do however offer a special order service for all liquid yeasts we do not stock.  We order directly from the manufacturers of Escarpment, Wyeast and White Labs every 5/7 weeks (on hand inventory dependent) to guarantee freshness and   We send out a notice 1 week prior to ordering to everyone who wishes to receive the notice and ask they submit their order by the pre-determined order deadline.  If you're interested in being on the Special Order Liquid Yeast, send an email to customerservice@defalcowines.com and in the subject line put "Liquid Yeast Special Orders".

Some items are seasonal and limited releases that fall under "Special Order"...you can check each manufacturers website to see what is available in their inventory....Escarpment Labs, Wyeast Labs, White Labs.

  • Escarpment Kveik Ring:Kolnasata

    Escarpment Kveik Ring:Kolnasata

    Kolnasāta is sourced from a traditional Latvian brewer named Dainis Rakstiņš from the Bērzpils area. Despite the name, it is neither a Kolsch strain nor a Pils strain ;-) Kolnasāta offers up ample doses of pineapple esters along with medium attenuation and flocculation. It is POF- (non-phenolic) which means it can be used in a wide range of beers. The traditional beer it ferments is made by heating the mash using hot stones!

    Notes:
    - This is not a kveik yeast but rather a continental European farmhouse strain.
    - We obtained permission to offer this strain from the brewer, who requested that anyone selling the yeast call it by the name Kolnasāta.
    - We have performed whole genome sequencing of this strain. Genetically, it is part of a group of other Continential European Farmhouse Ale strains and is different from kveik. More on that to come!
    - This strain is STA1- but shows growth on LCSM Agar indicating it is resistant to copper sulfate.

    This single-strain isolate from the Lærdal Kveik (sourced from Dagfinn Wendelbo) ferments fast (like most kveik), flocculates well, and adds pineapple and orchard fruit aroma to beer. Ferments fast and is suited to hazy IPAs or English ales.

    Escarpment Mud King

    Starting as a yeast blend based on captured wild isolates by Milk the Funk homebrewers around the U.S., Mud King is a blend of over 30 different wild isolates including a few captures from natural wines and French ciders developed in-part by DeWayne Schaaf.

    Recommended for Secondary Fermentation: Ferment in primary until 70% attenuation, then add Mud King. Allow to age for 6-10 months at 65-75°F. Under these conditions, expect acidity to be more moderate, strong pear notes, with Brett pushing an overripe tropical fruit note.

    Non-diastatic saison yeast, for brewers who don't want to worry about diastaticus.
    This yeast has a fruity Saison flavour profile without the STA1 enzyme. Amyloglucosidase enzyme is recommended to ensure an ultra-dry beer. Alternatively, we suggest a long mash at low temperature (65ºC for 90 minutes) to produce a highly fermentable wort.

To assist you in brewing premium quality beer Coopers has developed a range of brewing adjuncts specifically designed to enhance body, mouthfeel, ABV and head retention. Each contributes unique characteristics when used as recommended with their range of brewing extracts or can be used in recipe formulation.
Coopers Brew Enhancer 1 contains dextrose and maltodextrin. The dextrose will ferment out completely with no residual cidery flavours whilst the maltodextrin does not ferment thus improving the body, mouthfeel and head retention.  Use with lighter style beers such as Lager, Draught and Pilsner.
Coopers Brew Enhancer 2 contains dextrose, maltodextrin and Light Dry Malt. The dextrose will ferment out completely with no residual cidery flavours whilst the maltodextrin does not ferment thus improving the body, mouthfeel and head retention. The Light Dry Malt, being 100% pale malt, will further add to the body and increase the malt character of your favourite brew. Use where a fuller, maltier flavour is preferred.
Coopers Brew Enhancer 3 contains a high proportion of Light Dry Malt combined with dextrose and maltodextrin. The substantial quantity of Pale malt, maximises the malt character of your favourite brew whilst the dextrose and maltodextrin improve the mouthfeel and body, delivering a creamy head and avoiding any residual cidery flavours.
